For all of you who have made an attempt to make new years resolution; you have my applause. And now you have my permission to officially forget about all of them, especially the one you made about eating healthier.
If you like chocolate and then more chocolate inside of chocolate mixed with cream cheese, well then these naughty little babies are for you.
So come on, forget that new years resolution and indulge yourself to the dark side (of chocolate that is).
Easy Oreo Truffles
1 pkg. (1 lb. 2 oz.) OREO Chocolate Sandwich Cookies, finely crushed, divided (Nate and I like to mix it up a bit with the mint Oreo cookies)
1 pkg. (8 oz.) Cream Cheese, softened
2 pkg. (8 squares each) Semi-Sweet Baking Chocolate, melted
MIX 3 cups of the cookie crumbs and the cream cheese until well blended. Shape into 42 (1-inch) balls.
DIP balls in melted chocolate; place on waxed paper-covered baking sheet. (Any leftover melted chocolate can be stored in tightly covered container at room temperature and saved for another use.) Sprinkle with remaining cookie crumbs.
REFRIGERATE 1 hour or until firm. Store any leftover truffles in tightly covered container in refrigerator.

Ya know, I was discouraged enough when I went to grab some of the "sinfull" delights pictured above and found that they (like SOME people) didn't stay for the after party party at the Bringhurst's. But NOW, seeing that they were given to Jenna and not even offered to ME! What is this friendship comming to?!

I still have not gotten around to making any respolutions to eat healthier so I would not be breaking any. They sound wonderful... If I can find the time I might have to make some...
Jess- I made the header in photoshop (it's a similar idea to scrapbooking digitally)and then saved it as a jpg. After that I just added the image to my header. Make sense?
